Floating food actually tastes sweeter, the experts found, and they are able to make food pairings float in order, like a piece of cheese with a drop of red wine. For now, only pea-sized blobs are able to levitate.
But that's no bad thing, as the thought of an out of control flying tikka masala doesn't sound like a great idea. Scientists at the University of Sussex, in collaboration with the University of Bristol, created the contactless food-delivery system dubbed "TastyFloats". Heston Blumenthal pioneered scientific cooking in Britain with his use of liquid nitrogen and "molecular gastronomy". It's hoped the machine will allow chefs to offer customers "new culinary experiences" and it could also be used in gaming, virtual reality and cinema.

Scientists used low-cost ultrasonic transducers to form a standing wave of ultrasound. The waves are manipulated in such a way that they act as "acoustic holograms", creating invisible shapes that trap the object in place in mid-air. By changing these patterns, the food can be carried along on the wave and delivered to a precise location.
Dr Chi Thanh Vi found that TastyFloats had an effect on users' taste perceptions. Those who ate the food - by sticking their tongue out to catch the crumbs or droplets - said that bitter foods became less so.
